my brother in law loves to eat catfish. very sad.

 

Catfish isn't bad but I'm not a fan. I'm not big on fish to begin with but my friends recommended me a catfish po-boy from this bar and it was weak. I'd take a simple Haddock sandwich with just some tartar sauce and coleslaw on it any day.

 

I can make an awesome catfish filet sandwich that will knock your socks off. Just made it for me and some friends last night as matter of fact. The key is to deep fry the catfish in beer batter....It's awesome with perch, walleye and tilapia as well, for that matter. Probably any kind would work..... I got my mom's semi-famous (around here) recipe, and it makes better fish than anything I've had in a restaurant anywhere. Not giving the recipe but the batter is easy to make ...Equal parts (1 cup each) beer and flour, mix and let sit for 3 hours in a bowl at room temp....add your spices, make sure your oil is to temp and you won't be disappointed..Yeah the 'ol dawg can bust out a mean fish fry, I must say.. *SHADES*

 

Perch is good. I can't even remember what Walleye is like though. It's been a while.

We used to do this with Sunfish and Crappie. We'd catch them by the bucketful, fillet them and beer batter them.

Fantastic eats on a hot summer night with a cold beer.

 

Damn you guys !! I had a couple of halibut steaks in the freezer that I was saving.... Now I gotta go thaw them out !!!!!!!!!!!!!
