I had damn brisket issues. Basically the rub I had checked a few days ago disappeared and suddetwhen I find it there is hardly more than a couple tablespoons left. I used half and needed all of the other half and maybe mix in some stuff to get what I needed. I had to go to a 24 hour drug store just to get some basic spices I didn't have so that I could make a similar rub which the birthday guy insisted on. I got it close and he probably won't notice it's different. Italian spice blend, maple sugar (didn't have brown sugar handy or in stock), some more salt, pepper, a bit of oregano and whatever was left in the original rub. And it was close enough to Treager Blackened Saskatchewan as I could get it. That was after having a hell of a time trimming a stubborn fat strip between the point and flat with a lacerated left hand thanks to my cat falling next to me yesterday morning. I just gotta cook it a little fast and higher than I would have liked to. Go into it a check to see if it holds temp and then I'm passing out and passing watch duty to whoever is supptto wake up soon.
These early morning weekends are something. By the 4th round hopefully it wouldn’t be devastating if you got skipped by 1-2 teams. Feel free to give an extra 5 minute courtesy @xinik or anyone if this should come up again. Or don’t. Gamesmanship is gamesmanship lol
I got lucky. Brisket essentially skipped the stall. It saved me a few hours and it got a great bark which tastes better than the original rub. I just wrapped it and I'm putting it back in at a lower temperature I'd like for about 4 hours and then I can rest it around the time when the people start to get in and carve at around 5.
