Hannukah ended weeks ago but maybe there's some weird breakaway Canadian sect that is running a month behind schedule that I'm not aware of. Even as a Jew I concede Christmas is way more fun and the food is better. This year we're doing meatloaf, asparagus, wild rice, salmon (from Costco i.e. the best), sweet potatoes, mini bundt cakes, and ginger cookies. No beverages for me but the rest will have plenty of eggnog and wine.
Me and my lady are cooking for immediate fam/10 people. Slow roasting prime rib in a homemade rosemary and sage butter to medium rare. We’re Irish, so some potato, probably scalloped or au gratin, steamed broccoli, salad, fresh fruit/mixed berries. Dessert is French silk and Apple pies. I homebrewed a Belgian biere de gaard with wildflower honey, spices and strawberries, but also have St Bernardus tripel along with assorted beers and Pinot Noir for the wine drinkers. My cousin who stopped being a bears fan and converted to being a packers fan, is allowed to come against my wishes. I got him a nice, expired can of Alpo, but my German Shepherd may have something to say about that when she’s done with her food.

While Mrs EB is cooking up the perfect feast(inc haggis in blankets) i shall be sitting in either my first or second favourite chair(tbd) and drinking copious amounts of Tennent's as my ancestors have done for centuries before me. Hey, me too with some prime rib! The butcher had this spice blend we're going to use for the rub, we haven't made it in a few years, we traditionally went with a ham. I hadn't thought about the sides but an au gratin potato sounds awesome. Also, @tunafat, if you are willing to share the pistachio brownie recipe, that's my wife's favorite kind of nut (insert any joke you want here) and I just happen to have a costco sized bag of them I bought yesterday and a ton of chocolate lying around as well. So I went with the Blondies as the almond extract brings out the pistachio flavor. Ideally, pistachio extract would be best, but these are very good. Tunafat's Pistachio Blondie Brownies 2 sticks of unsalted butter (I've used salted butter all the time because I'm not going to buy unsalted shit if I'm not baking) 1 and 1/4 cups of brown sugar tightly packed 1/2 cup of sugar 2 and 1/4 cups of flour 2 large eggs and one large egg yolk 2 teaspoons of cornstarch (substitute 4 teaspoons of flour if you don't have this shit) 1/2 teaspoon of baking powder 1 teaspoon of salt if you use the unsalted butter otherwise skip it. 1 teaspoon of vanilla extract 1 3/4 teaspoon of almond extract 1/3 cup of sour cream 1 1/2 cups of ground pistachios just pulverize them bitches. If you didn't buy the shelled one's good luck with that it takes about a 6 once shelled bag to get about 1 cup. Mix all the dry ingredients first in one bowl (except the brown sugar) then in the mixing bowl mix the eggs, extracts, brown sugar, sour creme, and butter. Gradually incorporate the dry ingredients. (optional) I always butter the entire surface of the 13x9 brownie pan and then sprinkle granulated sugar over the entire buttered surface. Spread the mix evenly in the pan and bake at 350 for 30 to 35 minutes. Use a toothpick to check the middle. If the edges are a nice golden brown it's probably done.

In this last batch, I incorporated 3 ounces of creme cheese as well and they were even better. My kids raved about them (trust me they are my worse critics besides you guys here ). I went to my neighbor's house when I got home and brought them over there and they too were raving about them, but they were mostly drunk by then. They aren't over-the-top sweet either like the ingredients might indicate.
I finally got around to making this, and holy shit, fucking amazing. I was a little worried I fucked it up with how thick the batter was, but they turned out perfectly. Thanks for sharing dude, your hard work coming up with this is much appreciated by the entire family here. The Costco pistachios come roasted, shelled and salted, and I used salted butter, but the "extra" salt from the nuts (again, insert jokes here) didn't detract from the taste at all as far as I can tell. I recommend if you're making a bunch of batches of this, as the bag is pretty damn big.
