Not exactly what you're looking for but DraftHistory.com has some interesting ways to sort draft information. You can sort team draft history by round. Team draft history overall, and a few other ways.
There are sources to track transactions that include trades of draft picks. But I'll tell you that it will be hard to whittle it down and get trends that way because a very large proportion of picks end up changing hands. You might have to limit yourself to first round trades or first and second rounds only in order for it to be meaningful, and also limit it to trades made during the draft that don't involve players. (That was a big thing last year - a bunch of first round picks changed hands in trades for players last year, perhaps even more than cases where teams moved up.) But if you go by first round picks only and eliminate trades for players, you reverse the situation and end up with so small of a data set that it's hard to identify a trend. As an example, you mentioned the Patriots. Belichick still has that reputation because he traded down so frequently from 2006-2010, consistently stockpiling future picks. But while he did trade down from the first round pick last year, it was the first time he had done it since 2013. That makes it kinda hard to say if it's really such a big part of his playbook anymore. Amusing side note... Daniel Jeremiah doesn't know it, but NASCAR has races on road courses now. They actually do make right turns sometimes.

Something interesting that is coming down the pike... there's a genetic engineering company in Boston that is researching imprinting the DNA of the major cannabinoids onto brewer's yeast. They're doing this for one of the Canadian pot companies. When the research is complete (one of eight target cannabinoids has already been delivered, with the other seven expected by September), it will be commercially viable for them to brew cannabinoids in a pharmaceutical-grade lab rather that using chemical processes to extract the cannabinoids from the plants. One key advantage is they will be able to create custom varieties of vapes, including using THC-V in place of regular THC. THC-V is another component of the plant but is much more rare. It has the same psychotropic effects as THC but doesn't cause the munchies.
Interesting note on Belichick not trading back as much. They seem to use and abuse the comp pick formula these days to keep themselves stock piled with extra picks. Maybe they didn't feel like they needed to trade back as much once they were constantly figuring out how to get an extra 3rd round pick year after year. They have a 3rd, 4th and 5th as comp picks this year. There really isn't a need to stockpile additional picks when that's the case you know?
It's also the Rams entire strategy for roster building. Yes we'll lose 1/4 of our good players every year, but we'll just replace them with pick 100 and 134. What could go wrong?...
